Easter Eggs

Getting Ready for the Egg hunt!

Easter is here! And you know what that means! Peeps, egg shaped chocolates, jelly beans and many more. Overall sugar, sugar and more sugar. I don't like to give my little one sweets. When I do its a rare occasion. 
One of the things I didn't want to do is purchase a bunch of candy for Easter. So I was thinking what could be a better alternative? Then I saw that Goldfish was buy one, get one free at Publix (local grocery store). I had a light bulb moment! Why not put Goldfish crackers in the Easter eggs!? I can't wait till tomorrow and see her find the eggs and open them! I'll keep you posted if it was a success :)

Breaking Up With Your Pediatrician

My daughter's pediatrician is amazing! Very patient and always answers my million questions. The staff are also great. But I know that some parents are not content with their own pediatrician. If you are not happy you can change you doctor. But you want to do it the right way. I found this article on How To Break Up With Your Child's Pediatrician on Twitter. 
We might be doing this in the future since we will be moving. Don't know when but its nice to have this information beforehand.

Hello readers! These past few days I've expanded from Blogger! Yay me !
Bare with me. I'm new to Tumblr , Twitter and Facebook. I'm trying to get the hang of things.
Like I mentioned on my previous posts that I'm a big Pinterest Pinner so I won't have any trouble there. (lol) This is exciting and hoping to get more readers and start having followers.

New Recipe!

I'm a crazy Pinterest pinner! I always try to find recipes that my whole family will enjoy. Sometimes its a hit or miss. But this Baked Chicken Stuffed with Pesto & Cheese Recipe was amazing! And surprisingly easy to make!
There were a few things that I did differently. I had 3 chicken breast so I cut each of them in half (I think the term is called Butterfly) so I can have more pieces of chicken and have a little bit of leftover for lunch the next day. Since I had more pieces of chicken I made sure to double the stuffing recipe. Second I didn't use almond flour as the recipe ask for. I honestly didn't want to buy a $5 bag of almond flour for just this recipe. So what I did have in my cabinets were actual almonds and so I pulled out my handy-dandy food processor. I put the almonds in the food processor until it was flour like consistency. One thing that I added to my "almond flour" was kosher salt, onion powder , garlic powder, parsley and black pepper for a bit more flavor on the chicken. I don't know the exact measurements cause I eyeballed it. I taste it first and if it tastes as it needed more of one thing then I would add more. 
This chicken goes great with a nice salad or steamed veggies. I hope you enjoy this recipe as much as my family did! 

Tea Lover

Loving Me Some Tea!

I've always been a green tea or chai tea kind of girl. But drinking the same kind of tea gets a bit boring. The other day when I was grocery shopping I was looking at all the teas on shelf. I'm always scared to try new teas and wast $4. But one box caught my eye. The 100% Natural Teas Celestial Seasonings. It was a little under $3 which is great. It has a variety of teas. 
The first one that I tried was the Wild Berry Zinger. I loved this one ! It tasted like Fruit Punch! The tea itself was sweet and didn't need much honey in my opinion. The color of this tea was beautiful! ( like a wine red color)
The next one that tried was the Country Peach Passion. I liked this one too! It tastes exactly as its named. It was a yellowish/brownish color. Just like the first tea it didn't need a lot of honey. 
As you can tell from the last two pictures. I was a bit excited to drink these and almost forgot to take the picture before drinking it! 
The next two teas True Blueberry (left bottom picture) and Black Cherry (Right bottom picture) weren't my favorite but they were just good. I honestly thought they would be strong in flavor like the other ones. As you can tell the colors were just about the same 
And the last one Rasberry Zinger was good. It looked just like the Wild Berry Zinger. I love Rasberry tea but this one was on the weak side. But it was still good. Sorry I didn't take a picture of it.
 From the looks of it ( is should say taste lol) that I'm going to buy 2 new boxes of teas which are the Wild Berry Zinger and Country Peach Passion. 

Getting Back In Shape

Hitting the Gym!

Last week I mentioned that my goal of that week is to go to the gym at least 3 times. Guess what?! I did ! Yay! I am so happy that I did. It's an accomplishment . A small one but nonetheless still an accomplishment. Some readers might be thinking "Okay? Not a big deal" But it is a big deal cause on top of doing a million things in the day the last thing you want to do is work out. It may seem like a chore at the beginning but then it evolves to a part of you. Its becomes an automatic action like brushing your teeth every morning. 
Before I stopped working out in December 2012 , I would go work out 5 to sometimes 7 times a week. And cause of my hard work I've lost 32 pounds! I'm back to my old high school jeans and have a bunch of energy too! I want to continue losing weight in a healthy manner for my family and myself. I don't want to be the mom that can't really do anything due to their weight. Besides that I have a goal set to run the 5k for Miracle Miles Marathon.
When I went back to the gym this past week. I was a little scared that its going to take me forever to run my first mile let alone 3 miles. But I was surprised how well I did. There is always room for improvement of course. On Tuesday 3/19 I ran my first mile in 9 minutes and 10 seconds and my third mile was at 41 minutes and 41 seconds. I didn't pay attention to the time for the second mile cause I was watching a TV show. I finished with cool down at 43 minutes with a total of 3.10 miles. Not bad since I'm trying to stay under 45 minutes.  
My second day at the gym was Friday 3/22. First mile was at 10 minutes. It wasn't good compared to my first day. But I can always beat my times in the future. Second mile was 24 minutes and 19 seconds. Third mile was 35 minutes and 35 seconds. I finished with cool down (3.11 miles)  at 36 minutes and 50 seconds. Yay! I beat my Tuesday's time. Sorry I just get competitive with myself. Almost as competitive as Monica Geller from Friends. 
Then my third day was great! Mile one was 10 minutes and 26 seconds, mile two was 21 minutes and 50 seconds and mile three was 34 minutes and 40 seconds. At the end with cool down (3.11 miles) it was 35 minutes and 40 seconds! :-D 
Its a pretty successful week at the gym. Just gotta keep trying to go to the gym at least 3 times . Little by little I'm going to increase the amount of times so it doesn't feel overwhelming. 

Kids Activity

Found Some Dry Erase Markers!

This past week I was organizing my daughter's closet. And I came across some old dry erase markers that still work!  I kept thinking what can I do with them since I don't really use them. Then it hit me! Why don't I let my daughter draw on her big window ?! Its will be a fun activity that will get her away from watching her Sesame Street. I always try to find ways to avoid the TV as much as possible. Besides it being fun its an easy clean up or so I thought. My idea would of work if her windows were sliding glass doors. Don't get me wrong it was fun but then she marked the window sill by accident. And all I was thinking I hope this comes off easily! Of course with my luck it didn't. I had to use my Bleach clean up spray for it to be completely clean off. So moms keep an eye on your little one if there is a window sill. If your window sill is marble you'll be fine it just wipes off but if its wood you might want to be a little bit careful.

Get creative with your leftovers

What's left over?

Maybe it's just me but I sometimes don't want to eat the leftovers from the other night. I just find it boring. One thing that we make in our household often are quesadillas for lunch. We always have tortillas cause my husband loves it for breakfast. I usually find whatever meat leftover (chicken, pork, grounded beef)  and add  cheese and veggies. Or you can just do a vegetarian quesadilla with veggies and cheese. Its an easy way to have my little one eat her veggies!  I put my quesadilla in the toaster oven on the bake setting and I know its done when I see the cheese all melty.

Sucks Being Sick ...

Eww! Germs!

This past week I got sick. :(  That is why you haven't seen me blog like crazy. 
Now that I am a mom and a wife being sick is no fun. Not saying that it normally is. But I remember when I was younger my mom would make soup and I would pass out on my bed. Not really worrying about anything. School could wait till I'm fully recovered. 
Unfortunately that is not the case when you're a mom and a wife. People depend on you! While I was sick I still tried to manage to keep up with the house. Once my little one took her nap, I took advantage and took a nap as well. 
My husband was really sweet and went out and got me cough medicine and peeps! He really tried to help out with our daughter. There were points throughout the day where I couldn't keep up and I had to take an extra nap. 
Luckily I got better towards the end of last week. Just in time to have my father-in-law and sister-in-law stay for the weekend. We went to Universal Studios (you gotta love the annual passes!) and Downtown Disney. It was so much fun. But I totally forgot that it was St. Patrick's Day weekend. And boy was Downtown Disney packed! I usually avoid major holidays when going to the park. Cause I feel I'm being herded in the crowded. Also it wasn't easy maneuvering a stroller either. But other than that it was a great weekend. My sister-in-law and I made cupcakes. It was her first time baking ever! I know! Shocking ! But we had fun making them and they were delicious too! Spending time with family is always great! 
Now that I am better I have to get back to the gym! My goal this week is to at least go 3 times this week. I haven't been to the gym since December! :-O ! Recently I have been noticing the side effects of not going to the gym. I feel more tired by the end of the day. Luckily I haven't gained any extra pounds but I personally feel like I have. I have to get back into shape in time for my 5k or hopefully 15k :)

Do you have some pipe cleaners and don't know what to do with them ? You can make this St Patrick's Day Craft. Very simple ! If you don't have pipe cleaners you can substitute it with those fuzzy pom poms. Just an idea that I found since St Patrick's day is around the corner :)

Organize Yourself!

I'm pretty sure you wanted to get organized. You start off well. You get a nice planner or any other materials to start off organizing yourself. But then there was that day or two you decided to be lazy.(Hey, it happens you just need a day to yourself!) It becomes a slow crumble of getting back to your disorganized self. 
Trust me I've been there! I've done the white board calendar list, the grocery list on paper and the other million ideas to get organize with bills and grocery shopping.
I've always been that person that was disorganized but organized. But once I started college I had to get my stuff together. Over the years I refined my organizing skills with the help of my husband. He is the organize/clean freak in the relationship. He kind of rubbed it off me and I'm starting to notice on our little one too. I can't complain that she picks up her toys or throws away any trash she sees. 
One thing that my husband introduce me to was Google Docs. This is amazing! You say you have never heard of Google Docs?! This is like my life!
I'm not a super computer person but from my understanding Google Docs is like Microsoft Word, Excel, power-point and etc. But the only difference is that it is cloud base. You do not need the software to install directly to the computer cause it works off the internet. As long as you have a Gmail account you can click on Drive and access any kind of document you need. The great thing about it is that these Docs are portable. I can start typing on my laptop then continue on my husband's computer. And if you have a smart phone you can access it through their app called Google Drive. 
I mainly use Google's Spreadsheet which is like Excel. Like you see on the picture below I made columns ( Items , Quantity, Promotion, Estimated cost, Actual cost). Then I made a bunch of rows but group them into Canned Goods, Dairy, Deli, Meat, Misc, Produce, House Supplies and Pet Items. You can personally adjust these categories to make it easier for yourself. This is what we came up with and works just fine for us.
One thing you notice is how colorful it is. I love this! I can tell the difference what I am looking for when I need to quickly scan the list. Color your list anyway you like it. It's your list!
I made an estimated cost column because I want to be prepared of how much I am spending. To calculate your total you don't need to take out your calculator. All you need to do is highlight your estimated cost column all the way to bottom before the total row and click that Sigma letter (weird E letter). Once you click on that you click SUM and press enter. You will see your total on the Total row.  You also do this to the Actual Cost Column too. 
The purpose of the Actual Cost column acts like a check list you mark off while shopping. And it adds up everything for you at the end. (**Total is before taxes**) 
Like I said this is portable. I always keep adding items to my list through out the week through my phone or laptop. It's great cause I don't have to worry if I lost my list. No more wasting paper!  which is a plus! Your whole family can add items that they would like from the store. I know my husband does when he forgets to tell me that he wants those Tostitos chips and I'm already heading to the store. Gives you less of a headache.

14th Annual Miracle Miles

Tiny Babies, Big Miracles. 

My personal goal is to run the 5k Miracle Miles on September 21,2013. I've lately been wanting to run some sort of marathon for almost 3 years now. But I never found one that I can see myself dedicating time to. I had a few friends run Disney marathons which are great but it didn't stand out that much to me. 
Then I found out that Winnie Palmer Hospital ( the hospital that my daughter was born) has a marathon to raise money for the NICU (Neonatal Intensive Care Unit). I was so happy to learn about this marathon. Unfortunately, I couldn't attend last year's cause I was informed about it too late :( But this year I am planning to at least run the 5k. My ambitious side of me wants to run the 15k but I'll see how fit I am by September.
The day I gave birth I was originally located at a different hospital on the other side of town when I found out I was pregnant. The doctors told us that I would be in better hands at Winnie Palmer. While having contractions I was taken in an ambulance to Winnie Palmer. Within 2 hours of my arrival my daughter was born. She was a surprise baby miracle born at 4 lbs and 12 oz. Our little miracle was taken to NICU since there wasn't any prenatal history and she was born a few weeks early according to the doctors. We got to the NICU and they placed her in Pod 8 (where the least critical babies were). When we met the nurses, they could tell we were a little nervous. But they were great! They even showed us how to swaddle her, answered any questions and concerns we had. Very patient and informative. If I had to this all over again I wouldn't change Winnie Palmer and their NICU for the world. They helped us out so much that this marathon is a way to say thank you. 
I know at this time I have very few readers but I want to spread the word about this marathon. Even if you are not from Orlando and want to help out you still can! Waffle Recipe

My Go-To Recipe 

Last year I purchased my husband a waffle maker for Father's Day.(And used my Bed, Bath and Beyond coupon too!)  He loved it ! We have been using this waffle maker too many times to count :) My Husband and I are sometimes like Donkey from Shrek and just want waffles. 

I have researched many recipes and tried a handful of them. But  my go-to recipe is this Classic Waffle Recipe. I love this website cause I can adjust the serving quantity that I want to make for that day. The ingredients are already there in my cabinets! Other recipes ask for buttermilk or a specific kind of oil that I don't have. It's delicious and reheats well for the next day.

Saving Money at the Parks

I love saving money whenever I can especially on trips. There are a few things that are worth splurging and there are few things that are not. A good example are water bottles. I used to work for Universal a few years back and a bottle would cost $2.75. I would see families come in and purchase 5 bottles. In my opinion that's $13.75 that could go for something else. What we do is bring our reusable water bottles fill it up at the Starbucks in City Walk or to any restaurant in the park as well. Water taste better from their faucets than the water fountains that are located near the bathrooms (that is just my opinion).

You can also purchase souvenir cups at the park. They usually average $6-10 depending on which one you want. They sell different kinds of cups depending where you are in the park like by the rip, ride and rock it ride they sell cups shaped into guitars, men in black have green alien shape ones and at the Simpsons ride they have the Simpsons characters. We purchased ours at the Men In Black years ago and we bring it whenever we go to Universal. For soda drinkers, when you use a Universal/Island of Adventure souvenir cup they can refill them with soda for almost a buck. So you get a souvenir and get to drink soda for cheap!
Another way to save is on breakfast! You can bring oatmeal packets, cereal, bagels, fruits and etc. On this previous trip to Universal we stayed at the Hard Rock Hotel (which my husband and I love going to) they have a Keurig coffee machine in every room. The hotel supplies you with options like Newman's Own Organic Coffee regular and decaf version and also tea. This was great cause its 5 bucks that I saved and it also saved me a trip to Starbucks! Always make sure your hotel room can provide a fridge and/or microwave that way you can plan ahead. Some hotels won't charge extra for fridge if it's for "baby supplies".
On this trip we brought bagels, cream cheese, juice and fruit. We splurged one day (Check out day) , we had breakfast at the Boulangerie at Universal. The great thing about this place its located right when you enter Universal. They have a variety of food you can get such as muffins, sandwiches,and pastries. My husband chose a croissant egg, ham and cheese sandwich and drank water from his reusable bottle. I had his fruits ( strawberries and melon) and a danish with a cup of iced coffee. Our little one wasn't left out, we shared with her (minus the coffee of course!). For that day our breakfast came out to $12. It's not that bad for eating in the park.

It is so easy to be tempted to purchase snacks at an amusement park. Buying those pretzels can add up. One can bring your own snacks to the park. It's not a crime to do so. And the great thing is you can bring healthier snacks such as raisins, organic honey nut cereal ( it's my daughter's favorite), and veggie chips. I'm pretty sure as parents you don't want to wait in line while your kid is crying for that little bag of chips cause of hunger pains. It's not a pretty site.
