Downtown Disney and Easter

Last week there has been a lot of yard work going on here. 
It's mainly me doing it but my husband helps out too when he can. 
I tried to stay up for the eclipse. I was up until 2 am and was planning to wait till 3 AM. But I guess I was tired. At least I got to see it through my friend's Instagram and facebook pictures. 
Who else was daring to stay up for the eclipse?

We finally went to the courthouse and got our passports done! yay! Last week we were suppose to be traveling to visit Mami Amour. But no passports means no travel. It worked out cause my husband was pulled to do a project for work. 
We should be getting it in the mail next week. 
One thing that upset us is that there was no need for the translation for birth certificate for my husband's passport. I should of double checked the information beforehand. We believe if someone is considered an expert in their job or field then we take their word. It was very upsetting to hear that all we needed was my husband's citzenship (which we had) in order to proceed with the passports. So basically we could have had our passports about a week ago or so. It's done so there is nothing we could do now.


On Wednesday I had the pleasure of meeting one of my favorite YouTube-ers , Cole from Mommytipsbycole. I've been watching her videos prior to me having my daughter. I also met another YouTube-er  Erica from frombrainstobeauty. Never heard of her until now. She is super sweet and nice. I am now a subscriber of hers.
I am trying out vlogging. So here is a vlog from our meet up at Downtown Disney Florida. I hope you guys like it if there is a need of improvement let me know. Always willing to listen to others opinions. 


Over the course of the our Easter Weekend, we had my father-in-law staying with us. We finished a bunch of projects around the house. We painted our living room, my office, kitchen and dinning room. 
We tested the color in the kitchen and I have to say I am not fond of the color. My husband insisted on trying out the color. He likes it but I like it better for the living room. So I have to see what colors will go well for the kitchen.


On Easter, we were still finishing up with some of our home improvement projects. But we did end up relaxing. We had an Easter egg hunt. This was the first one that Jinx had the pleasure of doing it in a backyard. Her first Easter she was very young and last year she enjoyed it but it was indoors. 
We also had our friend, Liz, visiting and staying over for the night. She got Jinx another Easter Basket and some goodies for my husband and I.

Next weekend I am really excited cause my parents, siblings and my Abuelita are visiting us in our new house for the first time! Well my sister was here before but for the rest it will be their first time. Not only that but we are celebrating my Dad's 50th Birthday! And we can't wait.

DIY Easter Basket

Easter is only a few days away! 
And I have a DIY for you. 
Today I am making an Easter basket out of cereal boxes! 
I love having the ability to reuse everyday items. 
Normally I write a post of how to but I decided to make a video. I hope you like it :)

Ice cream, pig tails and horses!

This past week we went to our local china buffet. It's so delicious there and always have fresh ingredients. 
Jinx loves the dessert section. Which kid wouldn't? We don't go out often so my daughter takes advantage of when she can to stock up on sweets. And oh boy did she love her ice cream. 


Our week overall was very simple.
Until my husband, Bryan, saw Jinx with pigtails. He decided that he wanted pigtails as well. It then evolved to funny pigtail family "photo shoot".

The rest of the week was filled with yard work. We are currently redoing the front yard. It had a dozen of different plants and bushes. So we are clearing it out and starting from scratch. 
The times we weren't working on the yard we enjoyed our time in the backyard. We also found some horses next door! Jinx was really excited to see them. It's not rare to see cows and horse around here.

If you follow me on Instagram you probably saw that I received a Klout Perk from mcdonalds! So on Sunday we had some McDonald breakfast. I can't even remember the last time I had a McDonald breakfast. It was a nice change. I also enjoyed the free coffee that they were giving out too.

the last two weeks

I gotta say that I love when my husband cooks! 
Not only do I not have to cook but his cooking is so yummy! 
My daughter ate two plates worth of it.

We were watching the Big Bang Theory a couple of days before and there was an episode where they had these delicious looking brownies. And ever since then I was craving some brownies.
So of course we baked some brownies! My daughter and I just made some from the box. 
It was so delicious. My husband isn't a big brownies fan. And that is fine with me cause that means there is more for me.


A great tip if you are baking is to use non-stick aluminium foil or parchment paper instead of buttering the pan. Not only you don't have to clean the pan but you can easily take out your creation without damaging it. I wish I would of known about this before!
We normally try to take a walk at least once a day. But for some reason the previous Friday we had a furry friend follow us home. 
Don't really understand what the infatuation with our family and furry pets. If you recall we had a random dog stop by our house before.

Anyways I have a feeling that this someone's outdoor cat because it was so friendly and really clean too. I've seen this cat around the neighborhood before. If this is an outdoor cat shouldn't it wear a collar? That's just my opinion. 
So my mother in law has been asking us to get our passports ready. It's more so due to my husband's Grandma (we call her Mami Amour) being ill. She can no longer travel. If it were up to her she would but her body is tired but her mind thinks that she can do anything. 
Over these past two weeks we have been trying to get our passports. We've taken the pictures, gotten our papers ready. When we get there we can't do anything, well for my husband. He was born in a different country so his birth certificate is in a different language. They told us that we need it to be translated to English. So after finding someone to notarize and translate it in English we realized that it wasn't really needed. The person that was helping us to get our passport failed to mention other options. Translating cost us not only money but our time. Another bump on the road is changing my maiden name to my married name. We've been married for two years already but never really wanting to do it. It's such a hassle. Going to the Social Security place, waiting and then doing the same at the DMV. But it is finally done. I'm officially a Guzman! Yay! Now my husband can stop bugging me about it.
Hopefully this week we have chance to go to the court to get this passport done too.
One good thing that came out of this passport thing was going into "town". I now live 30-40 minutes away from Orlando. So a lot of major stores are not close by. Michael's, Whole Foods, Target and malls (oh how I do miss thee!) are a longer drive now. We stopped by Whole Foods and got a couple of goodies like freshly grind honey roasted peanut butter and almond butter. I made sure to get a big tubs of these. Don't know when I'll be back.

 Tried to take a decent picture of these two and this was the best shot. The dog was smelling hot dogs and Jinx was excited to have a dog next to her.
This past weekend our local animal shelter was having a mega adoption event. My husband insisted in going. 
It was so much fun. There were different animal rescues and Petsmart volunteers were there too. 
Ever since the unexpected dog visit a couple of weeks ago, we have been looking into finding a new furry family member. We are open minded to any breed and size. We were looking for a dog that we would connect with. There were a handful of dogs that didn't meet the criteria like being able to deal with small children and cats. So the pool was pretty small. We didn't end up getting a dog that day. There's no rush in getting dog. It will happen when it will happen.

2014 blogger Challenge #6

This blogger challenge is all about food! 
I have to say that my husband is a better cook than me. He makes amazing bbq and mac & cheese. 
I'm good at cooking but not the greatest. Gotta be thankful for the internet and Pinterest! 
If it weren't for that I don't know what I would be cooking for dinner. 
Even using a recipe sometimes it was a not a family approved one. There were triumphs and fails like with anything one does. 
But there are a few recipes that my family enjoys.

These recipes are the few that we repeat often. 
And of course we can't forget about the sweets. 
There were so many recipes out there especially in Pinterest that didn't really work out for me or didn't taste as good as I thought it would be. I don't want to reinvent the wheel but I created my own version of the Nutella Brownie in a Cup


I want to share one recipe that my husband loves to eat for breakfast. 
It's an English Egg Muffin Breakfast Sandwich. You probably have seen them at McDonalds. 
Not trying to talk down on McD's but I make a better breakfast sandwich.


Things You'll Need:
about a tablespoon of Butter
2 slices Ham
2 eggs
2 English muffins 
2 Kraft slice cheese

You can customize this with a wheat English muffin, egg whites or even add veggies like spinach or peppers

Steps:
1. Heat up your pan and add your butter.


2. Add both eggs and mix in the ham. Before adding the ham cut them into pieces.
3. This is optional: Toast your English Muffins

4. Once your eggs are fully cooked, separate it in half. Then add your slice cheese on top.
5. Place each half of the egg & ham mix on your English muffins.


Tah Dah! You have a simple breakfast that you can take to go or enjoy it at home. 
If you only want one sandwich then all you need to do is cut this recipe in half.
